Viva L’Italia!

This week at CMCS, Ms. Antoinette shared some of her old-Italian family traditions. The students began the week with making aprons. To cook in the Italian kitchen, a colorful apron is a must! For the following few days, kids participated in making some staples for any Italian diner table.

Students made homemade spaghetti from scratch! Three simple ingredients; flour, eggs, and a bit of olive oil, a little elbow grease…and presto! Spaghetti!

Here's where the elbow grease comes in...Kneading the pasta dough takes about 10-13 minutes on constant work!

Next the students learned the process to make fresh ricotta cheese. Again, three simple ingredients; milk, vinegar, and salt, some time to drain off the whey, and there you have it! Ricotta!

This is one recipe of ricotta hanging in cheesecloth. It takes about 30 minutes for the whey to drain off. Not much to making ricotta, but it tastes great!

Of course, there were lots of dishes to wash this week! I always welcome the help!

And to wrap up the week, the students made a traditional cannoli cream using our homemade ricotta cheese to take home and share with their family!
